Time between picking grapes and making wine: immediate, on site cellar.
Vinification: after the picking, grapes are softly pressed. Fermentation goes on at low temperature.
Temperature of fermentation of the must: 16 °C.
Lenth of fermentation: 20 days.
Total acidity: 5.6 g/l.
Steadying: by refrigeration at – 4°C.
