Average production: 80 q grapes/hectare (32 q/acres) 70 q wine/hectare (23 q wine/acre).
Time between picking grapes and making wine: immediate, on site cellar.
Vinification: soaking of grapes at low temperature with frequent delestage.
Temperature of fermentation of the must: 23°C.
Lenth of fermentation: 15 days.
Ageing: in steel tanks for 1 year, then in French oak barriques for four months.
Total acidity: 5.6 g/l.
Steadying: by refrigeration at – 4°C.
Sensory characteristics:
Colour: bright ruby red.
Scent: harmonic and delicate, with cherry aroma.
Taste: elegant, with an excellent flavour balance.
Content of alcohol: 14 % by vol.
Service temperature: 18°C.
Food pairings: roasted red meats, mature cheeses.
