Average production: 100 q grapes/hectare (40.5 q/acres) 70 q wine/hectare (29 q wine/acre).
Time between picking grapes and making wine: immediate, on the spot cellar.
Vinification: white. Fermentation in bottle. Disgorgement after 24 months of aging on the lees.
Temperature of fermentation of the must: 16°C.
Total acidity: 5.6 g/l.
Steadying: by refrigeration at – 4°C.
Sensory characteristics:
Colour: Bright straw yellow.
Scent: fruity, floral, elegant.
Taste: soft, balanced and persistent.
Content of alcohol: 12.5-13% by vol.
Residual sugar: <3 g/l in the Brut version, 33-50g/l in the Demi-sec version.
Serving temperature: 8-10°C.
Food pairings: antipasto, fish dishes.
