The wine is produced in the cellar inside the Masseria, with only the grapes coming from its very own vineyards. The winemaking follows immediately the picking of the grapes.
The cellar has a modern cooling system. In the underground cellar, temperature is naturally constant. Here, the old concrete tanks, cut into the rocks, have completely been covered inside with stainless steel. Another part of the old underground tanks have been opened, in order to make room for barriques and bottles, here retained for ageing.
